Spicy Shrimp Pasta

Ingredients

1 package
whole-wheat fettuccine, 1 lb
3 tbsp
olive oil
18 oz
shrimp, peeled and deveined
¾ cup
white wine
3 cloves
garlic, minced
½ tbsp
red pepper flakes
1½ 28 oz cans
crushed tomatoes
2 tbsp
grated parmesan
lemons, juiced
salt
black pepper
¾ cup
parsley, finely chopped

Instructions

Bring a pot of salted water to a boil. Add pasta and cook 1 minute less than package directions, or until just under al dente, stirring occasionally. Reserve ¾ cup pasta water, then drain pasta and set aside.

Heat olive oil in a skillet over medium-high heat. Add shrimp and cook until pink, about 2-3 minutes. Transfer out of pan and set aside.

Add wine, garlic, and red pepper flakes. Cook until evaporated, about 2-3 minutes.

Add shrimp, tomatoes, parmesan, lemon juice, salt, and black pepper. Stir to combine. Cook for 1 minute, stirring frequently.

water

butter

black pepper

Instructions

Heat carrots and water in a pot over medium-high heat. Bring to a boil, then reduce heat to medium-low and simmer until tender, about 7-8 minutes. Drain any excess water.
