Slow Cooker Ziti
(for 3 meals)
Ingredients
2½ cups
ricotta
¾ cup
fresh basil, chopped

8 cups
marinara sauce
1½ 15 oz cans
tomato sauce
cooking spray
7 cups
whole-wheat penne, 1 lb 7 oz total
3 cups
grated parmesan
1½ cups
shredded mozzarella
Instructions

Mix ricotta, basil, and eggs in a bowl.

Mix marinara sauce and tomato sauce in a bowl.

Coat slow cooker with cooking spray.

To assemble, layer sauce, pasta, ricotta, and parmesan in slow cooker. Repeat layers and top with mozzarella.

Cover and cook on low until pasta is tender, about 2-3 hours on high or 3-4 hours on low.
Roasted Eggplant

Preheat oven to 425F. Line a baking sheet with foil and spray with cooking spray.

Mix eggplant and olive oil in a bowl. Season to taste with salt and pepper.
