Tuna Pasta Bake
with carrot fries and a dinner roll
Tuna Pasta Bake
(for 2 meals)
Ingredients
4 cups
whole-wheat rotini, 14 oz total
1 tbsp
olive oil

yellow onions, finely chopped
4 cloves
garlic, minced
2 tbsp
tomato paste
2 28 oz cans
crushed tomatoes
1½ cups
water
2 tbsp
Italian seasoning
2 tsp
salt
1 tsp
black pepper
6 cups
water-packed light tuna, drained
3 cups
shredded mozzarella

Preheat oven to 350F.

Bring a pot of salted water to a boil. Add pasta and cook according to package directions, or until al dente, stirring occasionally. Remove from heat, drain, and set aside.

Meanwhile, heat olive oil in a skillet over medium-high heat. Add onions and cook until softened, about 4-5 minutes.

Add garlic and cook until fragrant, stirring occasionally, about 30 seconds.

Add tomato paste and cook until darkened, about 2-3 minutes.

Add tomatoes, water, Italian seasoning, salt, and pepper. Stir to combine. Reduce heat to medium-low and simmer until thickened, about 5 minutes.

Add pasta and tuna and stir to combine. Transfer out of pan and place in a 9x13 baking dish. Top with mozzarella and bake until top is golden brown, about 20 minutes.

Carrot Fries

carrots, peeled and cut into matchsticks

paprika

Preheat oven to 425F. Line a baking sheet with foil.

Mix carrots, olive oil, and paprika in a bowl. Season to taste with salt and pepper.
